Eating meals and drinking tea is a major part of the Moroccan and Berber culture. When sharing a meal with your Berber hosts expect to hear them say over and over “Eesh Eesh” literally “eat eat”. It is the responsibility of a host to feed their guests, and luckily for you the food is magnificent. A fine blend of exotic spices including chilli, cinnamon, pepper, nutmeg, berries, turmeric and grains of paradise. Most food is spicy but not hot.
Make sure you enjoy a Tajine whilst in the High Atlas region, various meats flavoured with fruit, olives, vegetables and wonderful spices. Slow cooked with steam in a Tajine pot. Vegetarians can also experience the joy of Tajine with a simple vegetarian Tajine made from vegetables, chickpeas and flower petals.
If you want to try the local version of a pie, then make sure you try a pastilla, chicken or pigeon with almonds and spices wrapped in a filo pastry.
Of course, you have to sample some delightful Moroccan mint tea, be warned this will be fully flavoured, sugary sweet, and scalding hot.
